Very simple cold soup of zucchini

Very simple cold soup of zucchini

Ingredients:

3 cups chicken or vegetable broth
4 medium zucchini or courgette
1 medium onion
1 clove of garlic
1-2 tsp curry powder
1 tablespoon olive oil
natural yoghurt or sour cream

Preparation:

Peel and chop the onion into cubes. Zucchini (courgette), peel and seeds, cut into slices as needed. Heat the oil in a pan and fry the onion until soft. Add the garlic and curry powder and cook, stirring, 1 minute.

Put the zucchini in a saucepan and cook 5 min., Then pour in the broth and bring to a boil, season with salt. Reduce the heat, cover the pan with a lid and simmer the soup for 15 minutes. Until the zucchini are tender.

Grind the soup in a blender smooth purée, salt, pepper and cool. Put in the fridge for 2-3 hours. Serve cold soup with yogurt or sour cream spoon.
