Truffles of chocolate with black pepper

Truffles of chocolate with black pepper

Ingredients:

Cream of a fat content of 33-35% – 150g
Dark chocolate (60-70%) – 200 g
Black pepper peas – 10 g
Butter – 30 g
Black pepper powder for dusting – 0.5 tsp
Cocoa for dusting

Preparation:

Coarsely chop the pepper in a mortar or with a rolling pin. Heat the cream to a boil, add pepper, cover and leave 15 minutes then strain the cream and again bring to a boil.

Chop the chocolate and melt in a water bath. Pour the cream, stir until smooth, add the butter and stir again thoroughly. The mixture should be smooth and uniform. Leave the mixture for several hours at room temperature, and then put into the refrigerator.

From frozen chocolate mixture to form small balls, roll each truffle in a mixture of cocoa and pepper. Ready-made candy store in the refrigerator in an airtight container.
