Stew of white beans with bacon

Ingredients:

650 g boiled white beans (preferably grade “lima”)
100-120 g of cooked bacon
2 tablespoons olive oil
1 small onion
1 carrot
2-3 celery stalks
4 cloves garlic
1 bay leaf
2 sprigs of fresh or 1 teaspoon dried thyme
1 sprig fresh or 1 teaspoon dried rosemary
2 liters of chicken broth or bean broth or bottled water
salt, black pepper and lemon juice to taste

Preparation:

Onions and garlic finely chop the carrots and celery – cubes.

Breast cut into long thick slices slightly less than ½ cm. In a saucepan over moderate heat, heat the olive oil, put the bacon and cook for 3-4 minutes. Turn over and cook for another 2-3 minutes, until the crunch. Put on a plate, the laid paper towel.

Add to the pan the onion, carrot and celery and cook, stirring, over medium heat for 7-10 minutes. Stir in the garlic, bay leaf, thyme and rosemary and cook for 2-3 minutes, for fragrant.

Add the beans, pour hot broth (broth or water), bring to a boil and simmer for 20 minutes Season with salt, pepper and lemon juice to taste.

Ladle the soup bowls, each put a slice of fried bacon – in whole or mangled to pieces.
