Skewers of chicken with dried fruit and cottage cheese sauce

Ingredients:

600 g chicken breast fillet
3 tbsp olive oil “extra virgin”
400 g of dried apricots
200 g of prunes
200 g of cottage cheese
the juice of half a lemon
salt, freshly ground black pepper

Preparation:

Soak skewers for 30 minutes If dried apricots and prunes are hard, pour boiling water and leave for 10 minutes. Drain in a colander, half of the dried apricots set aside. Fillet cut into pieces the size of dried apricots. In a bowl mix olive oil, half lemon juice, salt and pepper.

String on skewers chicken fillet, prunes and apricots and place on a large plate. Pour over the marinade and leave for 10 min. During this time, turn the skewers for 1-2 times. Cook the kebabs over hot coals for 3-4 minutes on each side.

Put in blender with remaining dried apricots and cottage cheese, pour the lemon juice and beat well.
