Salmon salad with grapefruit and arugula

Salmon salad with grapefruit and arugula

Ingredients:

olive oil
Sugar – 50 g
shallot
1 tsp ground white pepper
1 red grapefruit
white wine vinegar – 50 ml
100 g arugula
Garlic – 1 clove
salt
grated parmesan cheese – 50g grated
400g salted salmon fillet
8 large green olives, pitted
lemon

Preparation:

Mix salt, pepper and sugar.

Fish fillet fluff the mixture on all sides. Put in a deep dish, sprinkle with a mixture of vinegar and olive oil. Leave to marinate for at least 1 hour at room temperature.

Grapefruit peel and divide into segments.

Garlic peel and chop, lemon cut into thin slices (with the peel).

Arugula rinse, dry, clean the shallots, chop.

Salmon get out of the marinade, cut into thin strips and arrange on plates in portions.

Sprinkle with chopped shallots, arugula decorate, green olives, slices of grapefruit and lemon.

Pour the remaining marinade on the fish and sprinkle with grated Parmesan cheese.
