Salad with mushrooms and walnuts

Salad with mushrooms and walnuts


50 g lettuce Frise
200 g mushrooms
3/4 cup walnuts
half shallot bulbs
3 sprigs tarragon
1/3 cup “Extra virgin” olive oil
3 tablespoons walnut oil
2 tablespoons white wine vinegar
1/2 tsp salt


Heat a frying pan over medium heat and fry the walnuts until light brown, 3-5 minutes. Cool and chop coarsely.

Peel and chop the shallots, finely chop the tarragon leaves. In a bowl, combine the shallots, vinegar, salt and tarragon.

Pour dressing of olive oil and walnut oil, and whisk to form an emulsion. Cut the mushrooms into thin slices. Mould half filling in a bowl, put it in the mushrooms, stir and leave for 10 minutes.

Salad Frise tear into long pieces. Pour the salad part of the filling and mix. Put the frieze on a rectangular or oval dish.

On lettuce put mushrooms. Add the walnuts in the remaining dressing, toss and place for mushrooms. Serve immediately to the table.
