Salad of celery root, carrots and beets

Salad of celery root, carrots and beets

Ingredients:

mustard – 1 tablespoon
a handful of toasted pine nuts
Carrots – 1 pc
onions – 1 onion
vinegar – 2 tbsp
1 beet
olive oil – 3 tbsp
parsley
4 olives, pitted
Garlic – 1 clove
0.25 tuber root celery

Preparation:

Celery, carrots and beets to clean, cut into strips.

Celery and carrots lowered to 4 minutes in boiling water, then with a slotted spoon to shift into a bowl.

In the same water for 5 minutes, put beets, then discard it to a colander. Give the vegetables cool.

Onions clean, chop. Olives cut into thin circles. Garlic finely chop.

Whisk vinegar with mustard, olive oil and garlic.

Add the onion, olives and parsley. Season with salt to taste.

Cooled vegetables fill the sauce and mix. Sprinkle with nuts.
