Salad bulgur with tomatoes

Ingredients for 6 servings:

200 g of dry bulgur
1 large tomato
juice of half a lime (lemon is also nice)
a small bunch of parsley
2 tablespoons olive oil
salt and pepper to taste


Put the bulgur in a saucepan and pour 500 ml of boiling water.

Cover with a lid and give stand until grits does not increase in size and will not be soft on the outside and slightly elastic inside, about 15-20 minutes.

While infused bulgur, diced tomatoes.

Discard the excess water and shift the bulgur in a bowl. Add salt and pepper, olive oil, lime juice and finely chopped parsley. Mix.

Add the tomatoes, stir again.

We put in the refrigerator for at least 30-40 minutes to cool.

Serve the best as a side dish to meat or poultry.
