Rolls of eggplant with nuts


Eggplant – 2 pieces
Nuts – ≈ 100 g,
Garlic – 2 cloves -3 broth (vegetable or chicken) – 2 tbsp. l. (Optionally can be replaced mayonnaise)
salt, pepper, vegetable oil.


Eggplant cleaned, cut into strips along the thickness ≈ 1 cm. Season with salt and set aside for 20 minutes. Then, gently squeeze and fry in vegetable oil on both sides until golden brown.

Peeled walnuts grind in a blender, passed through a garlic press. Connect with garlic, walnuts, salt to taste and add a couple of spoonfuls of broth to make a thick sauce.

Lubricate the cooled eggplant stuffing, fold rolls out onto a plate. Garnish with herbs.

Spicy appetizer of eggplant with walnuts and garlic is ready.
