Muffins with raspberries and lime curd-filled

Ingredients:

For the liquid mixture:

250 ml of kefir or liquid yogurt
100 g butter
1 Cup sugar
2 eggs

For the filling:

150 g raspberries
100 g of cottage cheese
2 tablespoons sugar
1/2 tsp. grated lime zest
1 tsp lime juice

For dry mixture:

280 g flour
2 tsp. baking powder
1/4 tsp.
1/8 tsp salt

Preparation:

Preheat the oven to 180°C. Prepare the molds: silicone spray with water, metal thread inserts paper or grease with butter.

Mix the cheese with sugar, juice and lime zest.

Melt the butter and cool a little. Prepare wet mix: in a bowl mix the yogurt, sugar and eggs until sugar is dissolved, pour in the melted butter.

Prepare a dry mixture: sift into another bowl the flour with salt, baking soda and baking powder.

Pour wet mixture into dry and stir quickly. The mixture should just be wet, she must remain heterogeneous. Add raspberries and stir.

Spread the batter to the middle of the ramekins. In the center put 1 tsp cheese filling. And place the remaining dough. The dough should fill the tins only 3/4 of the height. Bake for 25 minutes until Golden brown.

Allow to cool completely and then remove the muffins from the molds.
