Muffins with olives and sun-dried tomatoes

Ingredients:

120 g flour
70 ml of milk
100 g sun-dried tomatoes
100g good pitted black olives
3 eggs
70 g Parmesan
70 ml olive oil “extra virgin”
2 tsp. baking powder
0,5 tsp dried oregano
ground sweet paprika
salt

Preparation:

Half of pitted olives cut into ringlets, half in small pieces. Tomatoes also cut into small pieces. RUB on a small grater Parmesan.

In a bowl combine sifted flour, baking powder, Parmesan, salt, oregano and paprika. Add olive oil, milk and whisked until smooth 2 eggs. Knead the dough, do not knead it especially.

Add tomatoes. Quickly knead the dough until smooth.

Lay in small forms, then put the remaining large pieces of olives, slightly pressing them into the dough. Whisk the remaining egg with salt and brush the surface of bread.

Bake at 180 °C for 25-30 min. Cool and serve.
