Mackerel stuffed with currants

Ingredients:

juniper (berries) – 5-6 pieces.
black pepper coarse – 0.5 tsp
red currant – a handful
a sprig of basil
salt – to taste
black currant, a few berries
Mackerel – 1 pc.
dry white wine – 1 tablespoon
leek (green part only) – 5 leaves

Preparation:

Green leaves leeks washed and dipped in boiling water for 40 seconds. Tilt in a colander and rinse with cold water. Put on a paper towel or kitchen towel, to the leaves had dried. * Instead of leeks can be used horseradish leaves.

Mackerel gut, using scissors to remove the fins and gills. The fish is thoroughly cleaned inside and out, pat dry and rub a little salt.

currant berries Wash. Basil wash, chop the leaves. Stir in currants with juniper berries, basil and black pepper.
