Grilled salmon

Ingredients:

1 salmon weighing 1.5–2 kg
2 tsp lemon spice mix for fish
2 tbsp olive oil

200 g green beans

For oil with herbs:

180 g unsalted butter
cilantro
garlic – 1 clove
lemon
salt, pepper

Preparation:

Fish wash, peel, remove heads, tails and fins (you can cook the broth). Cut into portions of a thickness of 2.5 cm.

On a baking sheet, lined with parchment, lay out the salmon steaks, brush them with 1 tbsp of olive oil and sprinkle with lemon seasoning for fish. Leave to marinate for 10 min.

Frozen beans drizzle with the remaining olive oil and grill, 7-9 minutes. transfer to a plate and cover with foil.

Fry each piece of salmon until tender, for 4-5 minutes on each side. Transfer to a plate and cover with foil.

To prepare the oil. Wash the lemon, cut in half, from half squeeze the juice. Greens to wash, chop. The garlic peel, chop. To softened butter add the lemon juice, garlic, herbs, salt, pepper. Mix thoroughly until a homogeneous mass. Transfer to a pastry bag and cool slightly, 5-7 minutes.

From pastry bag to isolate the “roses” from the oil, place in the fridge for 15 min. From remaining half of lemon squeeze the juice over the warm beans.
Decorate the fish “roses” from oil and serve with beans.
