FASTING PLOV with vegetables and dried fruits


2 cups long-grain rice
1 large quince
2 large carrots
2 large onions
1 head of garlic
100 g of dried apricots
50 g golden raisins
100 ml of vegetable oil
2 tbsp. l. mixture of spices for pilaf (cumin, barberry, hot peppers)


Peel the onions, carrots and garlic. Carrots cut into thick strips of medium length, onions – feathers. Garlic leave whole.

Quince wash brush, cut into 8 pieces, remove core, cut into small flesh plump slices. If necessary, rinse the dried fruit. Apricots cut into strips.

The cauldron or a large saucepan with a thick bottom heat the oil, put the onion, fry over high heat, stirring occasionally, 5 minutes. Add the carrots and quince, fry, stirring, for 5 minutes.

Add the onions to the cauldron with carrots and garlic quince, dried apricots, raisins and spices, salt. Pour 700 ml of water, stir and cook over medium heat for 10 minutes.

At the same time cook the rice soft manner: that is, put in a pan, add salt, pour plenty (3-4 liters) of boiling water, stir, put over medium heat, bring to a boil, stir again and boil for 15 minutes.

Fold the rice in a sieve, let the water drain off a little, but not all.

Put the rice in a cauldron, very close the lid to keep the steam (better to wrap the abutment foil). Cook to a minimum heat for 20-30 minutes.

Remove from the heat, wrap in a blanket kettle, let it brew afloat. Before serving, mix well.
