Courgettes in walnut-mint sauce

Courgettes in walnut-mint sauce

Ingredients:

the young zucchini – 4 PCs.
Cheddar cheese – 100 g
walnuts – 100 g
fresh mint – 4 sprigs
cream – 4 tbsp
salt – to taste

Preparation:

Grate the cheese on a coarse grater. Nuts chopped with a knife into fine crumbs. Mint wash, dry. 2 sprigs disassemble on the leaves and finely chop.

Mix the cheese, nuts, chopped mint leaves and cream. Season with salt and pepper.

Zucchini wash and cut in half lengthwise.

Lay the zucchini cut-side up in a greased baking dish, put cooked sauce. Cover with foil and place in a preheated 200 °C oven for 40 min.

When serving, garnish with remaining sprigs of mint.
