Chocolate and orange mousse

Chocolate and orange mousse

Ingredients:

dark chocolate – 200 g
butter – 1 tablespoon
sugar – 2 tbsp
chopped zest of 1 orange
orange juice – 1 tbsp
orange liqueur – 2 tbsp
large eggs – 4 pieces

Preparation:

Put the butter, sugar and chocolate pieces on the mangled in a refractory bowl, add 4 tablespoons of cold water. Place the bowl over a saucepan of boiling water and cook, stirring occasionally, until chocolate mixture is smooth. Give a little bit cool. Pour the liqueur.

Separate the yolks from the whites. In the yolks add the two-thirds of orange zest and orange juice. Stir the chocolate mass.

Beat the whites in a solid foam and small portions, stirring continuously, add the chocolate mass. Arrange the weight on the forms and put in the fridge for 1 hour. Before serving, sprinkle the remaining zest.
