Chicken salad with oranges, pumpkin seeds and watercress

The salad is VERY tasty! It is a little fuss, but it’s worth it!

Ingredients:

500 g ready grilled chicken
2 orange
a handful of lettuce leaves (preferably with watercress)
6 tbsp pumpkin seeds
1 tbsp dark soy sauce
4 tbsp raw almonds

For the filling:

6 tbsp olive oil
4 tbsp balsamic vinegar
salt, freshly ground black pepper

Preparation:

In a bowl mix olive oil with balsamic vinegar, season with salt and pepper.

Put pumpkin seeds in a pan with a thick bottom and pour soy sauce. A few minutes heat on medium heat until soy sauce evaporates and you will not feel the smell of roasted seeds.

Fry on the other pan of almonds. Almonds roasted very quickly, so you need to make sure it is not burnt.

From oranges with a sharp knife cut the peel to the flesh is visible. Cut the “fillet” on the slices. Hold the orange over a bowl with dressing to the juice pouring out. Add the peeled cloves in a bowl.

Remove chicken from bones, remove skin; cut the peel into fairly large pieces – but no more than “one bite”.

Add the chicken pieces in the dressing. To the same place roasted nuts, seeds and watercress. Mix well. Transfer to a salad bowl or on plates. Serve immediately.
*This salad will be very appropriate chips of hard cheese. Simply grate the cheese on a small grater and pour on hot pan. When melted, remove and let cool, before serving, break into large pieces.
