Cake with dried apricots and cottage cheese

Cake with dried apricots and cottage cheese.


for sponge cake:
1 Cup flour,
3 eggs,
1 tbsp honey,
1 tsp. baking powder,
1/4 tsp. soda
1 tbsp vegetable oil,
half a Cup of sugar.

Products for the filling:
400 g of cottage cheese,
300 g dried apricots,
1 tbsp (with slide) gelatin,
500 ml orange juice,
sugar – to taste.


First bake the sponge cake: beat eggs with sugar and honey
Mix the flour with the baking powder and soda
Add in a dough of flour and oil, knead
The resulting dough pour in form and bake 30-40 minutes (up to dry toothpicks). Biscuit cool cut into two cake.

For the filling:Gelatin pour 200 ml of juice and allow to swell, then to dissolve it.

Apricots pour over 300 ml of juice, boil on a slow fire, adding half a Cup of sugar.
Then to sue her and grind blender until smooth.

Mix the dried apricots with half of the dissolved gelatin.

Curd lightly whisk with sugar, adding sugar according to your taste. Pour the remaining gelatin, mix well

Assembly: first layer (without removing it from the form) put the cheese and give cottage cheese layer slightly to harden 20 minutes in the refrigerator.

Then top to put a layer of apricots, using it on 3/4. The next layer to be laid again cottage cheese. Then second layer.

Top cake pour remaining mass of dried apricots.
