Brownie with cinnamon, apples and dates


125 g butter
100 g dark (70% cocoa) chocolate
40 g cocoa powder
50 g flour
80 g sugar
2 eggs
30 g of cream fat content of 33-35%
70 g dates
1 small Apple
1 tsp of ground cinnamon and ginger powder
the Calvados or brandy, optional

For the soft caramel:

100 g cream fat content of 33-35%
100 g of sugar
30 g butter
1 tsp ground cinnamon
1 vanilla pod
pinch of sea salt


For brownie the chocolate and butter melt in a water bath. Separately mix flour, cocoa and spices. Mix the eggs with the sugar (do not whisk), then with slivkami, finally with chocolate mixture.

Apple peel and cut into small cubes. Just chop the dates. Add dry mixture and chopped fruit into the batter. Pour the dough in a greased form 18×18 cm and bake at 180 °C about 20 min.

Ready for another hot brownie moisten with a brush the Calvados or brandy.

For soft caramel cut the vanilla pod in half, vystrelit seeds into cream, add cinnamon. Heat nearly to boiling.

Sugar pour into the pan with non-stick coating, heat over medium heat until the sugar melts and does not become brown.

Pour strained cream (caution! The cream may splatter) and stir. Add butter and salt, stir, cook on medium heat until 103-104 °C.

To assemble cake, cut brownie into squares, pour over the caramel, let it harden. Decorate at your own discretion.
