Bean salad with mushrooms and cherry tomatoes

Ingredients:

200g green beans
200 g of small mushrooms
150g cherry tomatoes
80 g parmesan
5 sprigs of parsley
3 sprigs of basil
1 lemon
3 tablespoons “Extra virgin” olive oil
salt, freshly ground black pepper

Preparation:

Squeeze the juice from the lemon. Cut the mushrooms into thin slices, put in a bowl and pour half of the lemon juice. Leave for 5 minutes.

Boil water in a pan, add salt and cook the beans 5-6 min., It should be cooked, but remain crispy.

Fold in a colander and immediately transfer to a bowl of cold water and ice cubes.

Slice the Parmesan shavings with a knife for cleaning vegetables.

Cut the cherry tomatoes in half. Finely chop the parsley and basil leaves.

In a large bowl, combine the herbs, mushrooms, beans and tomatoes. Season with salt and pepper. Pour the remaining lemon juice and olive oil and mix. Arrange salad on plates and garnish with parmesan shavings.

Salad will be even more beautiful if you add the tomatoes of different colors – yellow, red, orange.
