Baked potatoes with young garlic and mint

Ingredients:

fresh mint – medium beam
black pepper freshly ground
salt-coarse sea
olive oil “extra virgin” – 2/3 Cup
young garlic – 1 head
new potatoes – 1 kg

Preparation:

Wash potatoes with a brush and peel, prick with a fork.

Pour into pan, bake in a preheated 170 °C oven for 1 h to Separate the mint leaves from the stems. The stems are chopped, put into blender along with the peeled cloves of garlic.

Pour in the oil and whisk until smooth. The leaves are crushed. Ready-made hot potatoes cut into quarters, pour the resulting green oil, season with salt and pepper and mix well.

Let stand 15 minutes, sprinkle with mint leaves and serve hot or warm.
